How I work things; I charge a flat labor fee plus the exact cost of the grocery receipts (which you will see for yourself). I base my labor fee on a few factors: #1. Location (will I have a commute?), #2. How many guests am I preparing for? and #3. The menu labor complexity. I feel that groceries in Lake Tahoe are expensive enough; I do not "pad" the ingredients and charge one sum that includes labor and groceries. Please keep in mind if you choose to shop around for another Personal Chef or Caterer, this is a common practice, which I do not agree with. It leaves you the client, not truly knowing what you are really paying this person to cook for you. Also, it is tempting for the chef to chinch on high quality ingredients because the less the ingredients cost, the more profit in their pockets! I believe that your dinner is only going to be as good as the ingredients that the chef starts with. I use only the best ingredients available for my clients. What the ingredients cost is all that you pay. I do not accept any kick backs from using certain businesses. This common practice results in higher grocery receipts for you! I am very honest, my labor fee is what it is and the groceries are what they are, no padding or kick backs! Obviously there are tricks to the trade to making more money, but I would feel like I was being dishonest to my clients. I am as straight forward as they come. Just be aware if comparing my fees with others, their lump sum fee may be less than mine but you may very well be getting less quality and quantity and would actually be paying them more than my labor fee in the end. I always like to know exactly what I am getting for my hard earned money and I feel my clients deserve the same!
